A true child of Tuscany, Valdo gained his first valuable culinary skills thanks to the traditional ways of his grandmother Dina and mother Giannina. From the start, he was taught by both women to search for use only the fresh and natural ingredients available in his surroundings.
Later on, his love for fine cuisine was further enhanced by his passion for photography and painting. He traveled extensively throughout Italy, France, Sweden and the United States of America always on the lookout for new surprising and pleasing accomplishments.
In the nineties he finally decided to open his own restaurant in Tuscany. It was not long before his unique recipes and professional art were awarded numerous prizes in various culinary publications including the 2004 issue of “Who’s Who of Chef” magazine.
His French born wife Sophie gained her management experiences in the demanding world of High Fashion Industry before moving on to assisting and currently directing their In-House Chef service business.
